St. Patrick’s Day Rice Krispie Treats with Lucky Charms 

Ingredients: 

  • 1/4 cup of butter 
  • 4 cups of soft marshmallows 
  • 5 cups of Rice Krispie cereal 
  • 1/2 teaspoon of vanilla extract 
  • green food coloring (optional) 
  • approximately 3/4 cup of Lucky Charm’s marshmallows 

Instructions: 

  1. Melt butter over low heat until completely melted.
  2. Gradually add marshmallows and stir often to avoid burning them.
  3. When marshmallow/butter mixture is completely melted, add 1/2 teaspoon of vanilla and your green food coloring and mix well.
  4. Remove from heat and stir in your Rice Krispie cereal. Once mixture is mostly combined, stir in the Lucky Charm’s marshmallows.

Irish Potato Bites

Ingredients: 

  • 20 Red potatoes, , small (golf ball size) 
  • 1/2 cup Corned beef 
  • 1/4 cup Cheddar cheese, , shredded 
  • 1 tablespoon Butter, , melted 
  • 1/8 teaspoon Salt 
  • Sour cream, (optional) 

Instructions: 

  1. Fill a large pot with water and bring it to a boil. 
  2. Add potatoes and boil until they are fork tender. 
  3. Preheat oven to 400°F 
  4. Once potatoes are cooked and have cooled cut each one in half and cut a small slice off of the rounded end so the potato can sit up. 
  5. Scoop out the inside of each potato half saving the potato insides in a bowl. 
  6. Add cheese, corned beef, butter to the bowl with the saved potato insides. 
  7. Salt mixture to taste. Also sprinkle some salt over the potato halves. 
  8. Scoop mixture into potato halves and then place them on a baking sheet. 
  9. Place baking sheet in oven for 10 minutes. 
  10. Remove from oven and serve with a dollop of sour cream.

Easy Shamrock Pie

Ingredients: 

  • Graham Cracker Pie Crust 
  • Vanilla Instant Pudding 
  • Milk 
  • Mint Extract 
  • Whipped Topping 
  • Food Coloring 

Instructions: 

  1. In a large bowl, combine pudding mix and milk. 
  2. Whisk until dissolved and starting to set. 
  3. Add mint extract and whisk until blended. 
  4. Add whipped topping and food coloring. 
  5. Fold in to incorporate. 
  6. If color is too light add one additional drop at a time. 
  7. Spread mixture into pie shell and refrigerate at least two hours. 
  8. Garnish as desired.

Guinness Glazed Meatballs

Ingredients: 

MEATBALLS 

  • 1 lb. ground turkey or beef 
  • 1 c. panko bread crumbs 
  • ¼ c. Guinness 
  • ¼ c. chopped onion 
  • 1 egg, lightly beaten 
  • 1 tsp. salt 
  • ⅛ tsp. pepper 

GUINNESS SAUCE 

  • 2 bottles Guinness 
  • ½ c. ketchup 
  • ¼ c. honey 
  • 2 Tbsp. molasses 
  • 2 tsp. dijon mustard 
  • 2 tsp. dried minced onion 
  • 1 tsp. garlic powder 
  • 4 tsp. cornstarch 

Instructions: 

  1. For the meatballs: Combine all ingredients in a medium mixing bowl. Mix well. 
  2. Form into 1 ½ inch balls (I used a small cookie scoop) and place on a rimmed baking sheet lined with aluminum foil and sprayed with nonstick spray. 
  3. Bake at 350° for 20-25 minutes. 
  4. For the sauce: Combine all ingredients except cornstarch in a medium saucepan. Whisk. 
  5. Bring to a boil, whisking occasionally. 
  6. Reduce heat to a simmer and simmer 20 minutes. 
  7. Whisk in cornstarch and continue simmering 5 minutes or until thickened. 
  8. Add meatballs to sauce. 
  9. Enjoy!

Lucky Leprechaun Parfaits

Ingredients: 

  • premade brownies or chocolate cake 
  • 4 double chocolate Jell-O pudding cups 
  • 4 vanilla Jell-O pudding cups 
  • crushed Thin Mint or Grasshopper cookies 
  • Green Food Coloring 
  • Reddi Whip or Cool Whip 
  • Fun Sprinkles 

Instructions: 

  1. Cut the brownies into small bite-size pieces and arrange half in the bottom of four parfait cups. 
  2. Spoon the double chocolate pudding over the brownie. Sprinkle the crushed cookies over the chocolate pudding. Add the rest of the brownie over the chocolate pudding. 
  3. Add a drop of green food coloring to the vanilla pudding and stir well until the pudding is green. Spoon green pudding over the crushed cookie layer. 
  4. Top the parfait with whipped topping and sprinkles!

Slow Cooker Corned Beef and Cabbage Sliders

Ingredients: 

  • 1 corned beef brisket with spice package 
  • 4 cups water 
  • 2 tablespoons sugar 
  • 2 tablespoons apple cider vinegar 
  • 1 cup potatoes diced 
  • 1 cup white onion sliced 
  • 1/2 cup carrots diced 
  • 1/2 cup celery diced 
  • 1/2 cup Dijon mustard 
  • 2 tablespoons honey mustard 
  • 2 tablespoons Guinness or stout beer 
  • 1 teaspoon dark brown sugar 
  • 8 sweet rolls cut in half to make buns
  • 1 cup prepared coleslaw 

Instructions: 

  1. Place water, sugar, and vinegar in a large slow cooker on high heat. Add brisket and spice packet to mixture. Place potatoes, carrots, onion, and celery on all sides of brisket. Cook on high for 4 hours. 
  2. Whisk together both mustards, Guinness, and brown sugar. Set aside. 
  3. When brisket is fully cooked, slice into 1/4 inch slices. 
  4. Stack 3-4 brisket slices on bottom half of bun, topped with coleslaw. Spread mustard on top part of bun to complete your slider. Serve with the veggie mixture. Enjoy!

Kielbasa and Cabbage Skillet

Ingredients: 

  • 1 tablespoon extra virgin olive oil 
  • 2 pounds fully cooked polska kielbasa , cut in half lengthwise, then cut into 2 inch pieces 
  • 1 small head cabbage , core removed, coarsely chopped 
  • 1 large sweet onion , cut into large pieces 
  • 3 cloves garlic , minced 
  • 2 teaspoons sugar (optional) 
  • 1/2 teaspoon salt 
  • 1/2 teaspoon black pepper 
  • 2 teaspoons rice wine vinegar 
  • 1 1/2 teaspoons dijon or brown grainy mustard 

Instructions: 

  1. Heat olive oil in a large nonstick sauté pan over medium-high and add kielbasa. Cook, without stirring for 1 minute. Then stir occasionally for about 3 minutes. Transfer to a plate with a slotted spoon. 
  2. In the same pan with some of the rendered kielbasa fat, add the cabbage, onion, garlic, sugar, salt, and pepper. Stir to combine and cook for about 5 minutes or more (depending how tender you like the vegetable), stirring occasionally. 
  3. Mix in the vinegar and mustard; add the kielbasa back to the pan and cook for another 2 minutes to heat through. Taste and adjust seasoning, if necessary. 
  4. Serve immediately and enjoy! 
  5. NOTE: If you’re not on a low carb diet, consider adding in some roasted potatoes or cooked egg noodles at the end – delish! The sugar is optional in this recipe, as noted, but it does give great balance to the salty kielbasa and tangy vinegar and mustard.

Original Irish Soda Bread 

Ingredients: 

  • 4 cup Flour 
  • 4 tbsp Sugar 
  • 1 tsp Baking Soda 
  • 1 tbsp Baking Powder 
  • 1/2 tsp Salt 
  • 1/2 cup softened Butter 
  • 1/4 cup melted Butter 
  • 1 1/4 cup Buttermilk 
  • 1 Egg 

Instructions: 

  1. Preheat oven to 375. 
  2. Grease a baking sheet. 
  3. Mix together flour, sugar, baking soda, baking powder and salt. 
  4. Add 1/2 cup butter, 1 cup buttermilk and egg to dry ingredients and mix until combined. 
  5. Flour work surface. 
  6. Turn out dough and knead briefly. 
  7. Shape dough into a round shape and place on prepared sheet. 
  8. Whisk together 1/4 cup melted butter with 1/4 cup buttermilk. 
  9. Brush loaf with buttermilk mixture. 
  10. Cut an X in the top of the loaf. 
  11. Bake 45 minutes or until toothpick inserted into the middle comes out clean. 
  12. Brush with buttermilk mixture every 15 minutes or so while baking.
