DIY popsicle recipes and fruit

There’s nothing better than a refreshing iced popsicle on a hot summer day. Instead of trekking all the way to the nearest ice cream shop, try making some frozen treats of your own. Here are some of the best DIY popsicle recipes.

Root Beer Float Recipes

Ingredients: 

  • 15 ounces A&W® Root Beer 
  • 1 cup vanilla ice cream 

Instructions: 

  1. Let the vanilla ice cream sit out for 5 minutes or until it becomes slightly melted.  
  2. Fill each mold a third to half full of ice cream.  
  3. Fill each mold with A&W Root Beer. Since the root beer will foam, let it sit for a minute until that foam goes down and fill some more until you have liquid to the top of each mold.  
  4. Put the popsicle mold lid on and insert popsicle sticks.  
  5. Let freeze overnight and serve. You can run the mold under lukewarm water for a minute to release the popsicles from the mold easier.

Jell-o Popsicle Recipe

Ingredients: 

  • Package of Jell-O (any flavor) 
  • Water 
  • Sugar 

Instructions: 

  1. Once you have your molds, bring 1 cup of water to a boil.
  2. After the water has come to a rolling boil, stir the package of Jell-O and the sugar into the boiling water. Stir all of the ingredients to combine.
  3. Then stir in one cup of cold water.
  4. Lastly, pour into popsicle molds and freeze over night. When you’re ready to eat them, run the popsicle mold under warm water to loosen the frozen popsicle from the mold and enjoy!

Funfetti Pudding Pops

Ingredients: 

  • 1 pkg. (3.4 oz.) instant vanilla pudding 
  • 1 ¾ cup 2% milk 
  • ¼ cup multi-colored jimmies (sprinkles) 

Instructions: 

  1. In a mixing bowl, whisk milk and pudding mix for about 1 minute or until it begins to thicken. Whisk in jimmies. 
  2. Pour mixture into popsicle molds, and freeze until firm (at least 3 hours). Once frozen, remove from popsicle molds and enjoy immediately.

Orange Julius Bars

Ingredients: 

  • 6 oz orange juice concentrate (thawed)
  • 1 cup milk 
  • 1 cup water 
  • 1/4 cup sugar 
  • 1 tsp vanilla 

Instructions:

  1. Stir the melted orange juice concentrate together in a bowl with the milk, water, sugar, and vanilla.
  2. Pour into popsicle molds and freeze.

Strawberry Orange Sunrise Popsicles (Paleo & Vegan)

Ingredients: 

  • 2 cups strawberries 
  • 1–2 Tbsp. pure maple syrup, honey, or agave
  • 2 cups orange juice
  • Popsicle Mold 
  • Popsicle Sticks 

Instructions:

  1. In a blender, puree strawberries until smooth. Taste the mixture and sweeten with 1-2 Tbsp. syrup, honey, or agave, if needed 
  2. Divide the strawberry mixture between your popsicle molds (mine holds 10 pops). Tap the popsicle mold on the counter a few times to remove any air bubbles and to help the puree settle. 
  3. Add about 1″ orange juice on top of the strawberry puree in each popsicle mold. Use a straw, drink stirrer or popsicle stick to gently swirl the orange juice into the top of the strawberry mixture. (This will help you create a gradient of color) 
  4. Pour the rest of the orange juice into the popsicle molds. 
  5. Insert sticks & cover with a lid if you can* 
  6. Freeze 3-4 hours or until completely solid. 
  7. To remove pops from the mold, run the outside of the mold under cold water for a few seconds, then jiggle the sticks side to side to loosen the pops. (Run the mold under water again if they’re still not loosening.)

Dole Whip Popsicles

Ingredients: 

  • 1 (20 oz) can crushed pineapple (juice and all) 
  • 1 (8 oz) tub Cool Whip, thawed (about 3 cups) 
  • juice from 1 lime 
  • 2 tbsp sugar 

Instructions:

  1. Place all ingredients together in a blender and blend until smooth. 
  2. Pour mixture into popsicle molds and freeze.

Lemonade Popsicles

Ingredients: 

  • 1/2 cup lemon juice 
  • pinch turmeric (for color) 
  • 1/2 cup vanilla yogurt 
  • 1/2 cup milk 
  • 2 cups water 

Instructions:

  1. In a large bowl with spout mix together the lemon juice and turmeric. 
  2. Once combined add in the remaining ingredients and stir until completely mixed. 
  3. Pour mixture into popsicle mold and then place in sticks. 
  4. Freeze popsicles for 4+ hours or until frozen solid. 
  5. *If you want it sweeter you can use honey, maple syrup, stevia, or even simple syrup.

Watermelon Popsicle Recipe

Ingredients: 

  • Cubed watermelon flesh (about 1 pound, rind removed) – 4 cups 
  • Freshly squeezed lemon juice – 1 tablespoon 
  • Sugar – 1 tablespoon (you can used honey also with same quantity 1 tablespoon)

Instructions:

  1. Blend the watermelon, lime juice, and optional honey or sugar in a blender (or process the melon through a juicer, then stir in the lemon juice and honey). 
  2. Pour the mixture through a fine sieve into a bowl, pressing the fibrous melon with the back of a spoon to extract the maximum amount of juice.
  3. Carefully pour or spoon the juice into popsicle molds and freeze until solid. Freeze it overnight for better results.

Key Lime Popsicles

Ingredients: 

  • 2 cups (480 ml) Simply Limeade® 
  • ½ cup (145 g) Sweetened Condensed Milk 
  • 12 oz ( 340 g) vanilla Greek yogurt 
  • 2 teaspoons lime zest (optional) 

Instructions:

  1. Combine all ingredients together in a large measuring or a mixing bowl, preferably one with a pour spout. Whisk until well combined and smooth. 
  2. Pour the mixture into your popsicle molds and insert the popsicle sticks. 
  3. Freeze for about 5 – 6 hours or overnight (best). 
  4. To unmold, turn the popsicle molds sideways and run them under warm water for 5 -15 seconds.

Peanut Butter Fudgesicles

Ingredients: 

  • ½ cup Peanut Butter 
  • ¼ cup sugar 
  • 1 teaspoon cornstarch 
  • ⅛ teaspoon salt 
  • 1 cup milk 
  • ½ teaspoon vanilla extract 
  • ½ tablespoon butter 
  • 2 ounces chocolate chopped or chips 
  • 1 ½ teaspoons cocoa powder 

Instructions:

  • In a large saucepan, mix the peanut butter, sugar, cornstarch, salt, and milk over medium heat until it melts together into a smooth consistency. 
  • Once it is smooth remove from heat and whisk in butter and vanilla extract. 
  • Pour ⅓ of the peanut butter mixture into a heatproof bowl and set to the side. 
  • Whisk the chocolate and cocoa powder into the remaining peanut butter mixture in the saucepan until melted completely and smooth. 
  • Fill 5 slots of your popsicle maker ⅓ of the way full of the chocolate mixture. Freeze for about 5 minutes. Fill another ⅓ of the way with the peanut butter mixture. Return to the freezer for about 5 minutes. Finally top with the last of the chocolate mixture. Insert popsicle sticks and freeze overnight. 
  • This recipe can be doubled for more popsicles.
